Bacon and Garlic Crunchy Pasta Salad
Serves: 6

Cooking Time: 30 minutes
Ingredients
20 cloves garlic, unpeeled
8 slices bacon, chopped into 1cm pieces
2 tablespoons salted butter
2 cups of bread, chopped into pieces
4 tablespoons chopped parsley
Ground black pepper
400g pasta of your choice
Method
Cook pasta according to instructions.
Drain and rinse pasta under cold running water. Set aside.
Preheat oven to 200C.
Place garlic on a lightly oiled baking tray. Bake until soft and golden – 10-15 minutes.
Peel garlic and set aside.
Fry bacon in a large frying pan over medium heat until crisp.
Melt the butter in a clean frying pan, add the bread pieces, parsley and black pepper and cook until the bread is golden.
Place pasta in a salad bowl, add the bacon, garlic and bread crumb mixture and toss well.
